Fresh Tasmanian Oysters that are award winning oysters at Dolphin Sands

 Let me introduce you to our family.  Melrose is our surname and that is where Melshell gets it name from. Ian, Don and Anne  began farming pacific oysters  here in 1984. Based at Dolphin Sands on the East Coast of Tasmania, our oyster leases are in Great Oyster Bay and the Swan River.  A culture of constant evolution has been required to continue supplying award winning oyster experiences at the farm, at restaurants and at fish markets.  .

Due to the farms isolation, production systems have been uniquely pioneered over the years. Long lines are used in Great Oyster Bay and cylinder baskets are used in the Swan River. Cassie joined the farm in 2000 and now operates the dining experiences and tours available at our  Melshell Oyster Shack, whilst Ian focuses on production and wholesale markets.  Our boys Charlie and Archie help out in school holidays.  Anne and Don are at the farm every week checking on seed stock and pottering around.
